Swiss Cheese Fondue

Ingredients


1 garlic clove


2/3 cup dry white wine


Squeeze of lemon juice


2 cups grated Gruyère cheese


2 cups Emmentaler cheese


1 Tbsp. cornstarch


2 Tbsp. kirsch


Pinch of salt


1/4 tsp paprika


1/4 tsp grated nutmeg

 
 
 

Swiss Cheese Fondue



Reputed to be the original of all cheese fondues. This is now the national dish of Switzerland. Make sure you buy genuine swiss Gruyère and Emmentaler cheese, as they are less likely to “lump” than other varieties.


Cut the garlic clove, then rub it around the inside of the fondue pot. Pour in the wine and lemon juice, and place over the lit burner.


Gradually add the cheese, stirring throughout until completely melted.


When the cheese has melted and begins to bubble, blend the cornstarch with the kirsch and stir into the pot. Cook, stirring, for 2 to 3 minutes.


Add the remaining ingredients to taste, then serve with cubes of French bread to dip into the fondue, and apple and pear slices to freshen the palate.
