Roasted Gold Nugget Squash

Ingredients


Squash (any orange-fleshed Butternut, Golden Nugget, or Pumpkin)


Orzo


Goats cheese


Squeeze of lemon juice


Salt and pepper


Olive oil

 

Roasted Gold Nugget Squash


Thickly slice the squash and remove the seeds. Place on a roasting tray, drizzling bits of oil over each square if you wish.


Bake for 30 minutes at 395 degrees F., turning halfway through.


Remove the skin from any pieces of squash. Mix the meaty squash chunks with cooked orzo, goats cheese and rocket. Dress with a squeeze of lemon, salt and pepper.
