Prosciutto Plate Panini

Ingredients


1 wide French baguette


8 ounces ricotta cheese


1 cup baby spinach leaves, loosely packed


8 slices prosciutto di Parma


4 tsp Extra virgin olive oil


Crushed red peppers


Pepper

 
 
 

Prosciutto Plate Panini



Preheat a heavy bottomed non-stick pan over medium heat. Build 4 sandwiches: cut baguette into either thirds or quarters (depending on your preferred serving size).


Spread each baguette with a few ounces of ricotta on each side. Pour one to two tsp of extra virgin olive oil into each sandwich.


Top with a few leaves of spinach and 2 slices of prosciutto for each sandwich. Add sandwich pieces together and place onto hot, heavy bottomed pan. Top with another heavy skillet or heavy plate to press sandwiches. Press sandwiches until blackened on both sides. Give 1 to 3 minutes on each side until each side is crisped.


Perfect for dipping in soups or the garden fresh pesto sauce.
