Honey Crust Pizza

For the pizza dough:

In a large bowl, add heated water, honey and salt. Stir, and add yeast. The heated water will activate the yeast. Stir once more, and let sit for 5 minutes.

Add flour and olive oil to the bowl gradually, stirring. The dough should begin to firm.

Remove the dough from the bowl, and knead for 1 minute.

Return the dough to the bowl and cover. Let sit for 45 minutes.

After 45 minutes, remove the dough from the bowl once more, and punch to smash out all air pockets. Return the dough to the bowl once again, and let rise for another 90 minutes.

For the sauce:

Try to coincide the creation of the sauce with the last half hour of the dough’s rising.

Add olive oil to the bottom of a medium-sized pot. Add chopped onion and chopped garlic and begin to cook on medium-to-high heat. Let cook for 5 minutes, stirring occasionally.

Add chopped tomatoes, stirring for 2 minutes. Then cover half of the pot and cook on low heat for 30 minutes.

When the sauce is nearly finished, add chopped basil and stir for 1 minute. Remove from heat. Salt and pepper to taste.

For the whole pizza:

Remove the dough from the bowl and roll out to fit a circular or rectangular baking sheet. Pinch the sides to build your crust, about 1/2 in. from the edges. Add sauce and spread with a spoon. Add cheeses and chopped broccoli and peppers. Add a small drizzle of olive oil. If you have extra basil, add.

Bake the pizza in your oven at 350 degrees for approx. 10-15 minutes. Keep an eye on the crust to see when is golden brown. Remove the pizza when it looks most appealing to you.

Return.
