
Dr. Stallcup’s Secret Chili
Stir fry chopped bacon, onions and garlic, as well as the steak in a pan for about 3 minutes. Remove from heat.
Move the contents into a large pot. Cook on medium heat, adding the diced green chili. Stir.
Wash the beans in a colander and shake dry. Add to the pot after 1-2 minutes. Stir.
Add a cup of lukewarm water to the pot. Stir.
Add cumin seeds, chili powder, paprika and oregano to the pot, stirring continuously until mixed. Add salt to taste.
Move heat from medium to low, cooking the chili for 60 minutes, stirring occasionally. Serve with carrots, celery sticks or potato chips.
Save leftovers for lunch the next day - Dr. Stallcup’s chili tastes better reheated after coalescing in the refrigerator overnight. Also, the longer the chili simmers, the better the flavor.
